We are excited to welcome Tony Chavez, owner and chef of Live Great Food, to share his experience building a successful, community-rooted food business in the Chippewa Valley. Live Great Food is a family-owned operation known for supporting local farmers and serving thoughtful, made-from-scratch food.
In addition to catering, Tony operates a popular summer food truck—well loved at the Eau Claire Farmers Market—featuring a “Farm to Truck” menu that is gluten-free and vegan-friendly (and yes, home to some of the best cheese curds around!). During the winter months, Tony and his team can be found at Wild, A Feral Kitchen by Live Great Food in Banbury Place, offering fish fry, brunch, and creative community dinners.
Tony will share his journey of becoming a local chef and how he has continued to pivot, adapt, and grow his business within the community. Topics will include food truck ownership, start-up and operating costs, licensing and inspection requirements, the importance of a base kitchen, staffing considerations, and the pros and cons of running a mobile food business.
Following the workshop, Tony will be available for individual questions, along with Michelle Thiede, Kitchen Steward of River Street Kitchen @ MOR.
This workshop will take place in the Kitchen Space inside the Wisconsin Farmers Union office on the second floor of Market on River.
